Sunday and Monday... January is ending

Well January is coming to a close! Which is great because then it's like one more month till Mr. Gideon is here. I really can't wait and I'm having braxton hicks contractions... or at least that's what I think they are. Hopefully tomorrow my mom and I can get the nursery all decorated and finished!

Yesterday in the morning I made waffles, ham, eggs, and strawberries for Clayton and Jeremiah. Then while Jeremiah was playing in his magic tournament all day/night I went out to my friend Rebecca's house to hang out and just have a relaxing time. I had dinner with her and her family and a few other friends.

Came home and Jeremiah got home and ate leftovers. So nothing special was made or ate.

Tonight I used leftover meat/veggies/beans and just made a Hogepodge of stuff. We made two hamburgers, a few pieces of chicken (shake and bake style), some homemade baked beans, and then cooked broccoli and cauliflower.

That's about it. Just hanging out, working, getting ready for baby. Off to bed we go.

What Day is it?!?!

I don't think I can count the days forever on when we eat out and when we don't. So I'm going to stop. Today, even though we ate out last week, we had lunch at a new Chinese buffet with our friend Clayton. There is a tournament for magic, and it's a bit of a tradition to go out to eat with all of the guys. However, the location we always go to had other plans and then guys went to a restaurant the three of us do not care for. So we had Chinese. It was really pretty good and filling. We ate at 11:00 and it's now 8:15 and i'm eating dinner... I wasn't hungry at all today (msg, lol). Well I had some frozen grapes around five.

Jeremiah really LOVED the quiche that I made last night, it's a go to recipe for sure. I just have to remember that it takes a while to bake and start it earlier than the directions indicate.

Tonight, Jeremiah is still at the tournament, he'll eat leftovers or snack later tonight. I am eating yet more leftovers. I think tortellini from Sunday........it's still good even this late in the game =]

I'm currently making banana butterscoth bread as well. I usually make awesome banana bread, but I decided to "change" it up and throw in about half of a package of butterscoth chips into the batter. We'll see how that goes =]

GIDEON;
I feel like we haven't updated on our precious baby boy to be in a while. Mr. Gideon is 35 weeks in development today. I can't believe that we only have 5 weeks left to go. I'm feeling really not ready, but yet ready. It's going to be such a major change. However, I don't want it to change anything but just have someone to love more. I worry about money at lot, but I know we'll be okay. We just have to have faith in God, for he always provides. I look at other babies, or my friends babies and children and wonder who and what he's going to look like. I want the cutest baby ever, and I know I'll love him no matter what.... but... is he going to look like me or look like his daddy? Who knows.

Well, I better get off of here. MJ Studios is going to work on some editing that is long over due for the beautiful Andrea and Kellen combo!

Day five - Easy Quiche

So, either I'm pregnant, I'm fat, I'm hungry, or this recipe is amazing (or all of the above!). I ate almost half of the pie! Yummy, fluffy, crispy, love it!

INGREDIENTS:

2 cups milk
4 eggs
3/4 cup biscuit baking mix
1/4 cup butter, softened
1 cup grated Parmesan cheese
1 (10 ounce) package chopped frozen broccoli, thawed and drained
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish (I just used a glass pie dish).
In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese (I used half of the bag (4 ounces) in the batter and then sprinkled some on top to melt). Pour into prepared quiche dish.
Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.

Interesting article I found online.....

Is Eating Out Cheaper Than Cooking?

This is an interesting article that surely grabbed my attention. First off, I don't know how much credit I can give to the author. I (the math queen, not spelling) found an error! Secondly, in their comparisons at the end of the article of different high end restaurants, somethings I think are over priced.

My counter argument:

Yes, we are in the midwest where our groceries are a bit cheaper. But what about shopping using coupons, watching sale prices, buying in bulk yourself (or splitting with another family), going to the city food market, or even growing your own produce. There are ways to save money while buying groceries.

I do agree with their point, that sometimes it is cheaper to eat out (specially when it comes to seafood and other expensive cuts of meat). However, the price you pay at the restaurant does not include the tip, the gas together, the waiting time (which sometimes it would be faster for me to kill my own chicken and make lemon chicken than to wait at the Cheesecake factory) and the lack of comfort compared to your home.

I would also like to state that when we eat at home, we have leftovers! A beautiful word in my opinion. Even if you can train yourself to bring home half of your meal from the restaurant, the odds of you eating it are unlikely (at least for me).

The health side of eating at home is a big factor for me. I know where my beef and chicken comes from. I know where several of my vegetables comes from (my mom likes to can/freeze her garden inventory). I DONT know where the restaurant's food comes from. Their portions are usually too large, stuffing your face with more calories does not save you money when you have to pay for that gym membership and doctor's appointment.

Overall I think the benefits of being with family, in the comfort of your house, eating what you want and having left overs out weighs a few cents and a few dollars here. A person just has to learn how to shop wisely.

I believe that is my soap box of the day!

I'm still going to challenge my family to only eating out (including pricy and cheap-o places) only twice a month.

Day three and four - Wednesday and Thursday

Wednesday we had a classic go to meal for us. Mushroom soup meatballs with gravy, mashed potatoes, corn, and biscuits. Talk about your hearty meal!

Mushroom soup meatballs with gravy:
Ingredients: ground beef, can of mushroom soup, water or milk, salt and pepper. Directions: Make the meat into half dollar to golf-ball size balls. Fry them in a skillet until cooked through rolling them over from time to time (I like mine black on all sides). Drain grease. Turn down heat to medium heat. Add one can of mushroom soup and one can of milk or water into the skillet. (I just use water, milk makes it creamer but I was out). Whisk or misk the soup mixture together to make a gravy. Salt and pepper to taste.

While the meatballs are cooking I'm making mashed potatoes as well. Last night I did something a bit different. While I was boiling my potato slices (slices cook faster, more surface area) I threw in some CAULIFLOWER! After everything was tender I drained the water and then blended in some butter and evaporated milk. I forgot we didn't have any milk (getting groceries today) but I had about 4 cans of evaporated milk to use, and it worked just fine. But the cauliflower looks and taste just like potatoes... but healthier for you! SNEAKY SNEAKY ME!

While I'm working on the potatoes and meatballs I have another pan of just corn warming up while multitasking even more by cooking the biscuits. You can use whatever vegetables you want (I also served it with fresh carrot sticks). You can do whatever makes you happy! Altogether it takes me about 30 minutes to whip this meal together.

Thursday: left over night! Because Jeremiah didn't go to work the first few days of this week, he hasn't had a reason to take leftovers to work, so our fridge is fully of yummies and passed goodies. Jeremiah is also playing in a magic tournament tonight so he'll just eat when he gets home he said. However, I am going to make some banana bread... my bananas are looking rather mushy! =]

Day two - subway...

Jeremiah talked me into getting subway tonight. I'm not going to count it as a night eating out for two reasons 1) we are using a gift card and 2) it is healthy and probably healthier than what I thought I was going to make!

The nice thing about subway... .I get the $5 footlong, and it last me two meals. So it's very reasonable for the veggies and everything we get.

I am going to make some banana bread I believe, and maybe some other treat for the magic guys. Not for sure.

Day one of second challenge....Chicken in Dumplings

Yup, we broke and ate out once in two weeks. So I'm going to start over with our count and see if we can go another two weeks without eating out. So day one, here we go. It seems as if we were defeated, but in reality we weren't.

Slow-Cooker Chicken and Dumplings

INGREDIENTS:
1lb of Boneless Skinless Chicken Breasts (about 3)
2 Tablespoons Unsalted Butter
2 cans (10.5oz) Condensed Cream of Chicken Soup
1 can (14oz) Chicken Broth (I think I'm going to try chicken broth out of the box... if it's still good).
1 medium White Onion, diced (half of a large)
4 Large Flaky Refrigerator Biscuits (half a can)

DIRECTIONS:
Place thawed chicken in crock pot and top with butter. Add cream of chicken soup, chicken broth and diced onions. Cook on High for 4-6 hours or Low for 8 hours. Do not stir while cooking.

Cut each uncooked biscuit into 9 small pieces and stir into the chicken mixture. Continue to cook on High for 30 minutes. Remove chicken from slow-cooker and shred with a fork. Return to slow-cooker and stir everything together. Serve hot.

Makes about 6-8 servings.

We'll see how this goes! =]

Edits:
I didn't have two cans of cream of chicken, so I used on chicken and one can of celery. I also used some extra broth from the box because I only had one 10 oz can. I used chicken pieces...

Jeremiah said it was really yummy (we added a bit of salt and pepper to our own bowls). Yummy!

Day 14 - Tortellini vegetable toss

Tortellini vegetable toss is our two week of eating out only once (and it doesn't even count really!).

INGREDIENTS and DIRECTIONS:
1 jar (24 ounces) Prego® Chunky Garden Combination Italian Sauce
1 bag (16 ounces) frozen vegetable combination (broccoli, cauliflower, carrots)
1 package (16 ounces) frozen cheese-filled tortellini, cooked and drained
Grated Parmesan cheese

Heat the sauce in a 3-quart saucepan over medium heat to a boil. Stir in the vegetables. Cover and cook for 10 minutes or until the vegetables are tender-crisp, stirring occasionally.
Place the tortellini into a large bowl. Add the vegetable mixture and toss to coat. Serve with the cheese

COST:
1 can of sauce $1.00
Tortellini $4.00
Veggies $1.00

Total: $6.00

Gideon's Stuff Check List

Below is a list I found from this website. I modified it to fit my needs and made notes of why I don't need it or why I already have it.

I'm slightly overwhelmed with all of the wonderful gifts we got at our baby shower today. Being the organizer and sorter I already washed everything and put a lot of things away. I still don't know what we need.... there are a few things for sure. I'm also trying to decide on how to organize the nursery. I know with time we'll figure things out and develop our own system.

Had the baby shower this morning, and it was wonderful. I am so blessed to have such amazing friends to do such a thing. And so many goodies to put away and wash and look at and cherish.

But Jeremiah and I broke.. for dinner tonight, we had Wendy's. We only spent $8, but still... we ate out. But I am very proud of us for making it this long, and all of the money we have saved I'm sure has helped. So we'll see how many more times we eat out in the next month or so. Maybe twice a month isn't too bad.

Sausage Muffins

SAUSAGE MUFFINS
3 c. Bisquick
1/2 c. water
1 can Cheddar cheese soup
1 lb. sausage, fried
Mix all ingredients well. Pour into 24 muffin pans. Pans can be lined with paper muffin cups or pans lightly greased. Bake for 10 minutes at 425 degrees.

LOVE THESE!! SUPER EASY!

Day 12 - Taco Soup (leftovers)

Tonight we had leftover taco soup. This was something we made last week and had SO much we froze extra. We warmed it up on the stove in a pot tonight and had enough to feed five grown ups (and some had two bowls!).

Jeremiah and I are both glad that it's Friday and we have the weekend ahead of us. We got a few groceries tonight at our local grocery store (the prices are typically really high, but sometimes their sales are just as good). I had a coupon for the store of $5 off $30. It was a nice little deal.

Day eleven - Spicy Mediterranean Pasta

Jeremiah and I are half way through our second week of not eating out. The challenge to see how long we can go without eating out is becoming sorta fun. I was always a competitive person.

I subbed this morning, and Gideon was super active; he must have really liked the room I was in. I'm taking out the recycling, getting some doctor paper work for J, and getting groceries later today as well as going to my doctor's appointment. We are now doing bi-weekly checkups.

Last night was lot of fun with our new small group. I made spaghetti (I personally liked the sauce I made, needed some sugar). I also made a cake, the icing gave me some trouble. But there are only two pieces left... so it went over well!

The recipe for Spicy Mediterranean Pasta can be found here...

INGREDIENTS:
1 pkg (13.25 oz each) dry whole wheat rotini, uncooked
1 pkg (16 oz each) frozen broccoli florets
1/4 cup olive oil
4 cloves garlic, finely chopped
1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
1 can (15 oz each) cannellini beans, drained, rinsed
2 tablespoons balsamic vinegar
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon ground black pepper

DIRECTIONS:
Cook pasta according to package directions, adding broccoli last 8 minutes of pasta cook time.
Meanwhile, heat oil in large skillet over medium heat. Add garlic; cook and stir 1 minute or until fragrant. Add undrained tomatoes, beans, vinegar and red pepper; cook 5 minutes, stirring occasionally.
Drain pasta mixture, reserving 1 cup of the cooking water. Return pasta and broccoli to saucepan. Add tomato mixture, salt and pepper; toss to coat. If pasta mixture is too dry, add the reserved cooking water, 1/2 cup at a time, until sauce reaches desired consistency.

NUTRITION INFORMATION (estimated):
Serving Size 8 servings (1-1/2 cups each)
Calories 285

COOK'S TIPS
If you don't have balsamic vinegar on hand, try red wine vinegar instead. To replace the fresh garlic with garlic powder, use 1/2 teaspoon garlic powder for the 4 cloves. You can also use great northern beans as a substitute.

Makes 8 servings = .56 cents a serving.. there will be leftovers!

I'm excited to see what Jeremiah thinks of this dish. It's meatless, and that might be strange for some. But it is healthy and cheaper to eat meatless at least once a week.

Day ten - small group - spaghetti feed

We made the simple ham, cheese crescent rolls wraps last night. They were really good, really simple. Something I will have to remember when Gideon is older. I think Jeremiah liked them as well.

Tonight we are going to a new small group with some of our friends. We have a pot luck dinner. So I am making spaghetti (noodles and sauce) as well as a cake to take.

Last night I wrote out a menu for another week trying almost all new recipes! I'm interested to see how long we can go without eating out. I am also curious how this has helped our health. I have one of my bi-weekly doctor appointments tomorrow, and curious to see how much I have gained since then.

I'm going to make some of my own sauce tonight with a little bit of ground beef to make it go a bit further. I'll have to make sure to not make it spicy for some kids and a few adults have issues with spicy foods. Hope it all taste well.

Day nine - ham and cheese rolls

We are on day nine of not eating out. Although sometimes I kinda crave an unhealthy hamburger, I realize I can make my own that would taste even better!

Jeremiah saw this recipe on a commercial. He really wanted to try it.

INGREDIENTS:
1 can of crescent rolls
Sliced ham
Sliced cheese

DIRECTIONS:
Heat oven to 350°F. Separate dough into 8 triangles. Place 1 piece of ham on each triangle; place 2 strips of cheese down center of ham. Fold in edges of ham to match shape of dough triangle. 2 Roll up each crescent, ending at tip of triangle. Place with tips down on ungreased cookie sheet. 3 Bake 15 to 19 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

COST:
1 can of crescent rolls $3.00
8 slices of ham $1.50
8 slices of cheese $1.00
2 cans of green beans $1.25
tator tots (for J) $1.25
Total: $8.00
Two adults ate
made two left overs.
$8/4 meals = $2 per meal/per person!

Tips for money tips on this and in general groceries:
1)I buy a 3 or 5lb ham chunk. This way I can slice it for recipes or dice it for something else. Why pay for someone else to cut my meat and package it all fancy and wasteful.
2)Cheese, buy sliced cheese in the big 160 slices. It will keep in a baggie in the fridge. Yes the 160 slices cost $10-15 at a time, but it last and saves you so much money compared to buying 24 slices at a time.
3) Coupons! I know that I don't normally buy pillsbury crescent rolls, but today before I get a few groceries I'm going to make sure I have coupons to buy the crescent rolls.
4) Don't just leave to get groceries. You will waste more gas when you are constantly getting groceries. However, I know that I have an appointment at 4:00 today, so I will get groceries on my way home. If I wasn't going to leave the house, I would chose a different recipe for today.

Save money while being green

My Personal Favorite List from all of these sites... and the quickest:
1) Turn off lights when you leave a room.
2) Use your bath towels more than one time. My husband and I can go a week or two. Air dry. You are are cleaning coming out of the shower.
3) Use dish towels and a dish cloth instead of paper towels or scrubbers.
4) Don't use a swiffer or off brand... I love my good old broom and mop.
5) Eat less meat (we are going to try this with our not eating out program!).

Day seven and eight - waffles and ground beef corn bread bake

Saturday night we (Clayton, Jeremiah and I) went to our friend Craig's house. He grilled chicken, zucchini, and bread for us (yum, me)!

Sunday (day seven of no eating out) I made waffles for Jeremiah, Clayton and I.... we ate the whole batch! I only had one, the guys ate the rest. I guess they were hungry, or they were delicious. Sunday night we split girls and boys up among our friends. Becca and I were sent to help our friend Michelle unpack, simply and get organized into her and her husband's home. The guys were left at our house, to stay out of our way =] Jeremiah baked two pizzas for all of the guys while Michelle made Manicati (sp?) and a side salad. It was very good, something new for me to try.

Monday (day eight of no eating out) For lunch I had left overs, Jeremiah made a quick fritio chili pie (chili out of a can... kinda icky to me). Tonight we made a ground beef/corn bread casserole. Here's our made up recipe (which we are about to try now!)

INGREDIENTS:
3/4 - 1 lb ground beef, cooked
1 green bell pepper, finely chopped
1/2 onion, finely chopped
1 can of black beans, drained and rinse
Taco seasoning
Corn bread mix
1 egg
1/3 cup milk
1/2 - 1 cup shredded cheese (flavor of your choice)
Picante Salsa to taste
Sour Cream is also an optional topping.

DIRECTIONS:
Brown the ground beef and cook the onions and peppers until they are tender. Add the taco seasoning as directed on package. Add the black beans to warm them. In a separate bowl mix the corn bread mix as directed on the box. In an 8x8 sprayed pan combine the meat and corn bread mixture. Top with cheese. Cook in a preheated 400 degree oven for around 30 minutes or until fully cooked.

Top with lettuce, more cheese, salsa, sour cream or so forth


Jeremiah said it was pretty good, specially for our first try and making it up! It was very filling and I personally enjoyed it (I liked the sweetness the corn bread brought) and the ease of putting it all together vs. having just tacos.

Day six - chicken pot pie

Today is day six of no eating out. It is Saturday, and sometimes the hardest for us not to eat out. We have the time to go enjoy ourselves, we like to be with friends and so forth.

I have been feeling a bit sick... sneezing, running nose... boo! So I wanted something warm and "homey" to eat.

I made Chicken Pot Pie for Jeremiah, his friend Clayton who often is with us on the weekend, and of course myself and Gideon (Gideon jumped for joy with it's deliciousness)... we ate the whole pan. I only had a small bit, those two men were hungry!!

I don't have a "recipe" for chicken pot pie... it depends on a lot of things such as what I have available, who is eating it (I know Jeremiah could eat a pot pie of just potatoes and little chicken). This is the third meal I've made this week off of one whole chicken.

INGREDIENTS (amount varies on size of pan/pot and taste) that I usually use:
chicken cooked, chopped or shredded about one or two cups
Potatoes chopped (I typically use three)
Mixed vegetables (I use frozen, you can use fresh just make sure they care cooked first, or cans of corn, green beans, so forth)
1 to 2 can(s) of cream of chicken
Salt and Pepper to taste

1/2 cup milk
1 cup baking mix (I buy off brand Bisquick)
1 egg

DIRECTIONS:
Preheat oven to 425 degrees. Boil potatoes (and/or other fresh vegetables) until they are soft. While potatoes are cooking in a pie pan or other casserole dish mix other vegetables, soup, and chicken. Add in drained cooked potatoes and mix all together in pie pan. Salt and pepper to taste.

In separate bowl mix milk, baking mix, and egg pour on top of pot pie. If you like a thicker crust you may double the recipe. Do note that it will take longer to bake and will need to be checked.

Bake for at least 30 minutes or until crust is golden brown and not running when sliced into.

Enjoy and serve.




Later today I also made the chocolate crackle recipe here. It is very, very, very sweet! But really easy to make. It does take a while to cool/harden.

Currently watching: American's Test Kitchen on PBS... one of my favorite cooking shows! Told Jeremiah we have almost made it a week without eating out and that I think we should try going two weeks! Maybe eat out twice a month...it would be more like a date instead of just getting our grub on.

Day five - no eating out!!

We haven't ate out for five days!! Tonight is leftovers/sandwiches. Jeremiah plays magic the gathering at a store. I'm staying home to relax (have a bit of a cold). So when I packed J's lunch this morning I added an extra sandwich/snack for him to eat tonight.

The chicken enchiladas from yesterday were amazing in my opinion. So yummy!!

Tomorrow I'm thinking Chicken pot pie?!? It's one of my favorites, and warm and calming.

Day four - Chicken Enchiladas

Yesterday we didn't eat out, we had salad and a frozen pizza. Nothing fancy!

Jeremiah spent the day working; because he's the best husband ever!! And I went to my grandparents with my mom to work on a building project with grandpa. We built recycling centers (pictures coming soon)for our house!!

Today, I am making chicken enchiladas.

I found several different recipes for enchiladas, but I like what we have used in the past. What Jeremiah and I created!

Ingredients:
Tortillas
1 can of re-fried beans
1 can of enchilada sauce
onion chopped (however much you like!)
diced tomato can be canned or fresh
shredded cheese
shredded chicken
pepper and spices to taste

Directions:
Saute onions, tomato, and cooked shredded chicken. Pepper saute mixture to taste (or use other spices such as cayenne pepper and so forth).
Place tortillas on a flat surface, spread refried beans over tortilla. Spoon chicken mixture into tortilla, add desired amount of cheese, spoon a bit of enchilada sauce and then roll up tortilla and place in a 13x9 sprayed glass baking pan.
Pour remaining enchilada sauce over the top of the rolled tortillas, top with more cheese.
Bake at 375 until cheese is melted, sauce is bubbly, and the insides are fully warmed.

We haven't made these in ages, they are one of my favorite recipes to cook because you can make them to suit your taste (Jeremiah doesn't like tomatoes so sometimes I only put those in mine. We don't always use tomatoes. Sometimes we add a can of chilis (the 4 ounce can). So have fun with this recipe.


It snowed here last night!! Nothing major (although a few rural schools were cancelled). Jeremiah made it to work safely. I'm getting ready to call his doctor about a form he needs to fill out. My mom is coming over to help sew some things together for Gideon's room and finish up the recycle bins. I think then we are going shopping...

Oatmeal Raisin Cookies

Jeremiah loves Oatmeal Raisin Cookies, yet I never make them for I haven't found a good recipe.

I found this recipe from another blog I follow. Here is a picture of her work.

Crickle Candy

1 sleeve saltines (might need a few more crackers depending on your pan size)
1 c. butter
1 c. brown sugar
1 pkg. chocolate chops
Chopped nuts, coconut, marshmallows or whatever you want to top it with.

Preheat oven to 425.

Line 10x15 cookie sheet with foil. You want to use a pan with a rim around it. Lay out crackers in a single layer, touching sides.

Melt butter in saucepan. When melted, stir in brown sugar. Bring to a gentle boil and cook for 3 minutes, stirring constantly.

Pour over crackers and place pan in preheated oven. Bake for about 5 minutes, or until edges get a little darker.

Sprinkle chips over cracker & toffee. The heat will melt the chips and you can spread it with a spatula. Top with whatever topping you want. Cool and refrigerate until set. Crack apart and keep in refrigerator.

Day two - slow cooker taco soup

Yesterday I made the santa-fe chicken. Everything went well, except I forgot the cheese! How did I forget the cheese?!?!?!

Today, I found this recipe from all recipe.com

Slow Cooker Taco Soup:

Ingredients:
1 pound ground beef
1 onion, chopped
1 (16 ounce) can chili beans, with liquid
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can whole kernel corn, with liquid
1 (8 ounce) can tomato sauce
2 (14.5 ounce) cans peeled and diced tomatoes
1 (4 ounce) can diced green chile peppers
2 packages of taco seasoning mix
Water to fill crock pot

Directions:
In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on Low setting for 8 hours.

Servings: 8
Amount Per Serving Calories: 362 | Total Fat: 16.3g | Cholesterol: 48mg

Because this makes A LOT, it will be a good soup to freeze and save for a later date.

Alterations and substitutes:
I browned the meat with one onion, one green pepper and three garlic cloves all finely minced.
Then I used two cans of kidney beans, and one can of (15 ounces) tomato sauce for I didn't have the smaller version.
I also used some pepper and some salt to taste.

We'll see how this taste in a few hours!

We ended up eating it with tortilla chips and some shredded cheese. Jeremiah said it was okay, it didn't "wow" him though. We decided that it needed TWO packages of taco seasoning. It did make a FULL crock pot, so we are freezing more than half of it for another meal another time! =]

**Notes**
To spice it up, some of the comments were made to cook the onions, taco seasoning WITH the meat. I'm going to do that.

Jeremiah went back to work today! Two days in a row. I hope he can make it all week. He's working 10 hour shifts, and I know it's hard on him. But he can do it. I just continue to pray that he'll be proud of this accomplishment, the amazing things he is doing for this family.

Gideon is getting bigger and bigger! I'm 32.5 weeks down!

Day one, no eating out - Chicken

Yesterday we cooked all of our meals, but then as we were going to a friends house Jeremiah wanted to stop and "reward" us with ice cream. I couldn't honestly say no; this pregnant momma loves ice cream! So we spent $3.35 on ice cream. I can handle that.

Jeremiah went back to work today (off from being sick). He took a lunch of hot pockets, chips, oranges, pudding cup, granola bar, peanut butter crackers.... he has a 10 hour shift to last through.

I had for breakfast, leftovers from yesterday's breakfast. A yogurt cup for a snack and here soon I plan on eating another snack before I go for a walk.

This morning I put a whole chicken into the crock pot. We have standard recipes for cooking chicken dinners, but I wanted to try something new.

INGREDIENTS:
1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
2 cups frozen whole kernel corn
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1/2 teaspoon ground cumin
PAM® Original No-Stick Cooking Spray
4 boneless skinless chicken breasts (5 oz each)
1/2 cup shredded reduced fat Mexican cheese blend

DIRECTIONS:
Preheat outdoor grill to medium-high heat according to manufacturer's directions. Stir together beans, corn, drained tomatoes and cumin in medium bowl.
Place four 18x12-inch pieces of heavy foil on counter. Spray each with cooking spray. Place 1 breast in center on each piece of foil. Spoon 1/4th bean mixture over chicken for each packet. Bring up short sides of each foil packet and double fold top. Double fold both ends to seal each packet, leaving space for steam to gather.
Place packets on grate of covered grill. Grill 15 to 20 minutes or until chicken is no longer pink in centers (165°F). Carefully open packets; sprinkle 1/4th cheese on top of each breast. Close foil and let stand 2 minutes or until cheese melts.

COOK'S TIPS:
Packets may be baked on shallow pan in 425°F oven 20 minutes or until chicken is no longer pink in centers. Or, to save aluminum foil, place chicken in 13x9-inch baking dish sprayed with cooking spray. Spoon bean mixture over chicken; cover dish with aluminum foil. Bake in 375°F oven 30 minutes or until chicken is no longer pink in centers.

Serving Size 4 servings (1 packet each)
Calories 386


**Note**
I will be using the oven method. I also have to "switch" things up because my chicken will be fully cooked from the crock pot. Jeremiah also likes spicy food so I plan on adding some zest to it. I'll let you know how it goes and get back to you.


This was so yummy! I made a few of my own adjustments: I used one can of whole corn and one can of cream of corn instead of two cups frozen corn. I made this with a side or rice as well, which they went well together. Also, it need to be a bit more spicy (for Jeremiah's taste, he thought it was bland). Most importantly, DON'T FORGET THE CHEESE!!! I was in such a hurry I forgot the cheese. It was still delicious.




Need to go walk my mile, and then going out to take pictures for Andrea and Kellen.

I also got a call from a school district, wanting me to work for them. I turned them down =[ can't do it with having a baby soon!

one of my FAVORITE time articles

As a gift a few years ago, my mom got Jeremiah and I a two year weekly subscription to TIME. In one of their past magazines was this article. I found it by far incredibly interesting. I know that as a soon to be parent I will face these lies and truths, but also as the child that is least favored I understand how the kids with the small piece of cake feel.

But even if you aren't the favorite, you have to remember you are special to someone else. That you are loved no matter what. And that the child that is favored might not be as happy as you are. Those struggles make you stronger, wiser, brighter, and a better person all around.

Eating Healthier for Two

Jeremiah's health has been not the best lately. So he needs to eat better. My maternity pants are fitting snug so Gideon and I need to eat healthier. Overall, it is cheaper, better for the environment and better for us.

My goal for the week is not to eat out for the entire week! I want to cook, and not just our boring recipes, but try new things. We tried a new recipe last night, it was okay.. simple and kinda blan.. but we learned and we know how to improve it.

Groceries, Savings, Healthy Eating

At the very bottom of this post there is a list of about 80 items that I have been "tracking" for lowest prices. Even though I took out some of the hard work for you, it will take time to really save money on your grocery bill.

What you will need:
A notebook of whatever size. Mine is smaller about 4 x 5 so that I can carry it in my purse if I need to, calculator, pen and any Grocery adds, coupons, and any grocery receipts.

Every week, grocery stores send out adds via mail or e-mail (some stores, such as target, walgreens, etc. have coupons online or adds online to view). What the stores don't want to tell you is that even though it is in an add, doesn't mean it's their lowest price. This is the challenging part, the tracking.

In your notebook, write down any thing that comes from the add or that you buy for the week. You will want to write down the price AND the size. Size is important because sometimes it's cheaper to buy in bulk, sometimes it's not.

For about the first month or two you will just be getting your normal groceries or looking at adds. You will write down the sales price. Then, you can see what rotates and when it rotates. Like I know that in the summer grapes, strawberries are cheaper so I don't tend to buy those off season.

You can copy my list (of what I have been tracking for several years) to help you get started.

THE KEY TO SAVINGS:
After you have found the lowest price, then you have to wait for it to be that low. Canned vegetables for example can be as low as 38 cents. One week a store might advertise cans for . 48 and you think this is great! You might need to buy one or two for you weekly dinners.. but the week after that, or maybe two weeks after the cans then will drop to .38 cents. So it's best to check your list and wait for the price to drop even more!

Don't be overwhelmed:
First, start with only watching your 10-15 most common items. The fact that you have my list below to help you, will save you a lot of heartache and headache. But don't be overwhelmed with whatever you do.

Then find when the best to buy is. When the item is at it's lowest, is when you want to buy the most... have a cabinet empty to hold all of your spare non-perishables. If you it is an item (like fresh vegetables or fruit) that will go bad, when the item is at its cheapest is when you use it in all of your meals. Making a weekly menu based off of what you are buying for the week will save money.

Once you feel comfortable with finding the lowest price is when you can start adding in coupons. I have personally not yet mastered coupons for usually I can find the price to be lower with just waiting. Some stores will double coupons, some stores match adds you will just have to find what works for you.

Don't be afraid to ask questions at your grocery store. And don't be afraid to google for answers. www.couponmom.com is a site that collects coupons that you can print from your computer. It is free, as far as I can tell and what I have used. Only print the coupons you need... don't waste your ink! =]

My personal goal this weeks is not to eat out AT ALL for an entire week, seven days. I will try to update on here with what we ate and how much my grocery bill was.

Also, I just listed the item... I am a person that is NOT afraid to buy generic. It all taste the same for us, and when we cook, you can't even tell if it's the store brand or a name brand. But just watch for adds... the store brand is not always the best buy!

Christmas!!!



I was 30 weeks and a few days in this picture. Getting so large! =] But I'm filled with baby love. <3



We were able to put up our little tree and stockings. The cute blue one is for Gideon! I really liked our Christmas "stuff" throughout the house, and was really sad when we had to take it down. I know we didn't HAVE to take anything down, but if we didn't do at that point in time... I would never do it! =]



Here is my husband (the oldest one in red on the right) with his cousins. He's the oldest and first grandkid and we will be having the first great-grandkid! It's nice to spend the holidays with a bunch of kiddos. I love getting to see my family at Christmas, but we are all just a bunch of old-folks!

Christmas was great this year. There were a few friends I wish we were able to see, but life is life and we just have to move on sometimes. Also, I have been writing my "entries" backwards. Here is a look at 2011 a bit of a run through with the past year.

January 2012

I am currently 32 weeks at this point. I need to upload a newer picture.

Where to begin with this update?

2011 was a great year, from what I can remember... it seems so long ago. The first semester of the year went well and quick.

We moved into our lovely new home in April. I can't believe that we have been living here for almost a year. It's so spectacular and we are very blessed to have this place. We have our room, a nursery for Gideon Xavier, a business/spare room, and then the finished garage is Jeremiah's game room/band room. It's fantastic. So very thankful for everything.

We got to take our Europe trip... that's why we started this blog in the first place. It was yet another blessing to check off of our list. We traveled to London, Paris, Barcelona, Rome, Bern and then back home. We have our favorite memories. And it makes me want to travel more. Ireland is very much on my list, and Greece! But next time it won't be so "go-go all the time" but I just want to go to the location and relax/enjoy the place, then come back.

Paris, is where we found out about the tragedy of Joplin. I hearts sunk instantly. God watched over our friends and family. Although the building process is still going on, the town is still sticking together. It impresses me how quickly the town has done everything. I continue to pray that God will watch over the rebuild and the emotional repairs that take place for everyone.

July 4th is when we found out we were pregnant! Gideon, as we later found out he is a boy, was in our plan and so excited to meet him. However, I decided that those pregnancy test are tricky.

August, I started student teaching with my wonderful 180 kiddos. I had such a fantastic time at the school. My cooperating teacher was by far the most amazing person to work with/for. I learned so much while being there and can not wait until I get my own classroom! The pregnancy only proposed a few challenges, sick here and there, and just constantly being tired. But made it through.

November, we paid off Jeremiah's car... which is a big deal!! Hooray! =] Thanksgiving was pretty low key at Jeremiah's family. We had J's brother stay with us a few days, and we helped my dad cut wood.

December came and went. Jeremiah had a great birthday, and I graduated. Christmas was another fantastic memory. Although I was a bit bitter at moments, just not understanding some people's motives. But it was a great time.

New years we had a very low key family game night with some of our friends. It was exactly what we needed/wanted.

New Years Resolution:
1) Take more pictures (specially because Jeremiah/Graduation got me a new camera!)
2) Lose the baby weight incredibly fast.
3) Go to church more.
4) Get out of debit and save for Gideon's college and our house.
5) Be the best wife/daughter/friend/mother possible. Love all, no matter how much the irritate me.


So thankful for all of the opportunities 2011 brought. Glad for all of the friends I have made and the family that is there.

CURRENTLY:
Jeremiah is still working at NCO, part of the tech. support for Quickbooks. However the past three weeks have been really rough on him. He's been sick with this pain in side (has had it since June, at least that we can remember). So he's been missing a lot of work (lean on God, he will provide for us). But we also have spent the last four days at the doctors/hospital running test, this and that.

I am currently unemployed, for the first time in my life, in a really long time. I am subbing at the school I student taught at, but haven't had too many calls. Trying to get everything ready for Gideon's arrival. Counting down the weeks at this point. 8 more weeks! We can do this.

I feel incredibly huge, but I know everything will be okay! As long as he is healthy.

Well, this is long and I should get off of here.

Frustrated, but I will get over that. Just confused about a few friends and family... I want to say what is on my mind... but then again I don't want to start anything. Just.. bahhhahahaha.
