Well January is coming to a close! Which is great because then it's like one more month till Mr. Gideon is here. I really can't wait and I'm having braxton hicks contractions... or at least that's what I think they are. Hopefully tomorrow my mom and I can get the nursery all decorated and finished!
Yesterday in the morning I made waffles, ham, eggs, and strawberries for Clayton and Jeremiah. Then while Jeremiah was playing in his magic tournament all day/night I went out to my friend Rebecca's house to hang out and just have a relaxing time. I had dinner with her and her family and a few other friends.
Came home and Jeremiah got home and ate leftovers. So nothing special was made or ate.
Tonight I used leftover meat/veggies/beans and just made a Hogepodge of stuff. We made two hamburgers, a few pieces of chicken (shake and bake style), some homemade baked beans, and then cooked broccoli and cauliflower.
That's about it. Just hanging out, working, getting ready for baby. Off to bed we go.

What Day is it?!?!
I don't think I can count the days forever on when we eat out and when we don't. So I'm going to stop. Today, even though we ate out last week, we had lunch at a new Chinese buffet with our friend Clayton. There is a tournament for magic, and it's a bit of a tradition to go out to eat with all of the guys. However, the location we always go to had other plans and then guys went to a restaurant the three of us do not care for. So we had Chinese. It was really pretty good and filling. We ate at 11:00 and it's now 8:15 and i'm eating dinner... I wasn't hungry at all today (msg, lol). Well I had some frozen grapes around five.
Jeremiah really LOVED the quiche that I made last night, it's a go to recipe for sure. I just have to remember that it takes a while to bake and start it earlier than the directions indicate.
Tonight, Jeremiah is still at the tournament, he'll eat leftovers or snack later tonight. I am eating yet more leftovers. I think tortellini from Sunday........it's still good even this late in the game =]
I'm currently making banana butterscoth bread as well. I usually make awesome banana bread, but I decided to "change" it up and throw in about half of a package of butterscoth chips into the batter. We'll see how that goes =]

I feel like we haven't updated on our precious baby boy to be in a while. Mr. Gideon is 35 weeks in development today. I can't believe that we only have 5 weeks left to go. I'm feeling really not ready, but yet ready. It's going to be such a major change. However, I don't want it to change anything but just have someone to love more. I worry about money at lot, but I know we'll be okay. We just have to have faith in God, for he always provides. I look at other babies, or my friends babies and children and wonder who and what he's going to look like. I want the cutest baby ever, and I know I'll love him no matter what.... but... is he going to look like me or look like his daddy? Who knows.
Well, I better get off of here. MJ Studios is going to work on some editing that is long over due for the beautiful Andrea and Kellen combo!

Day five - Easy Quiche
So, either I'm pregnant, I'm fat, I'm hungry, or this recipe is amazing (or all of the above!). I ate almost half of the pie! Yummy, fluffy, crispy, love it!
INGREDIENTS:
2 cups milk
4 eggs
3/4 cup biscuit baking mix
1/4 cup butter, softened
1 cup grated Parmesan cheese
1 (10 ounce) package chopped frozen broccoli, thawed and drained
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish (I just used a glass pie dish).
In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese (I used half of the bag (4 ounces) in the batter and then sprinkled some on top to melt). Pour into prepared quiche dish.
Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.

Interesting article I found online.....
Is Eating Out Cheaper Than Cooking?
This is an interesting article that surely grabbed my attention. First off, I don't know how much credit I can give to the author. I (the math queen, not spelling) found an error! Secondly, in their comparisons at the end of the article of different high end restaurants, somethings I think are over priced.
My counter argument:
Yes, we are in the midwest where our groceries are a bit cheaper. But what about shopping using coupons, watching sale prices, buying in bulk yourself (or splitting with another family), going to the city food market, or even growing your own produce. There are ways to save money while buying groceries.
I do agree with their point, that sometimes it is cheaper to eat out (specially when it comes to seafood and other expensive cuts of meat). However, the price you pay at the restaurant does not include the tip, the gas together, the waiting time (which sometimes it would be faster for me to kill my own chicken and make lemon chicken than to wait at the Cheesecake factory) and the lack of comfort compared to your home.
I would also like to state that when we eat at home, we have leftovers! A beautiful word in my opinion. Even if you can train yourself to bring home half of your meal from the restaurant, the odds of you eating it are unlikely (at least for me).
The health side of eating at home is a big factor for me. I know where my beef and chicken comes from. I know where several of my vegetables comes from (my mom likes to can/freeze her garden inventory). I DONT know where the restaurant's food comes from. Their portions are usually too large, stuffing your face with more calories does not save you money when you have to pay for that gym membership and doctor's appointment.
Overall I think the benefits of being with family, in the comfort of your house, eating what you want and having left overs out weighs a few cents and a few dollars here. A person just has to learn how to shop wisely.
I believe that is my soap box of the day!

Day three and four - Wednesday and Thursday
Wednesday we had a classic go to meal for us. Mushroom soup meatballs with gravy, mashed potatoes, corn, and biscuits. Talk about your hearty meal!
Mushroom soup meatballs with gravy:
Ingredients: ground beef, can of mushroom soup, water or milk, salt and pepper. Directions: Make the meat into half dollar to golf-ball size balls. Fry them in a skillet until cooked through rolling them over from time to time (I like mine black on all sides). Drain grease. Turn down heat to medium heat. Add one can of mushroom soup and one can of milk or water into the skillet. (I just use water, milk makes it creamer but I was out). Whisk or misk the soup mixture together to make a gravy. Salt and pepper to taste.
While the meatballs are cooking I'm making mashed potatoes as well. Last night I did something a bit different. While I was boiling my potato slices (slices cook faster, more surface area) I threw in some CAULIFLOWER! After everything was tender I drained the water and then blended in some butter and evaporated milk. I forgot we didn't have any milk (getting groceries today) but I had about 4 cans of evaporated milk to use, and it worked just fine. But the cauliflower looks and taste just like potatoes... but healthier for you! SNEAKY SNEAKY ME!
While I'm working on the potatoes and meatballs I have another pan of just corn warming up while multitasking even more by cooking the biscuits. You can use whatever vegetables you want (I also served it with fresh carrot sticks). You can do whatever makes you happy! Altogether it takes me about 30 minutes to whip this meal together.

Thursday: left over night! Because Jeremiah didn't go to work the first few days of this week, he hasn't had a reason to take leftovers to work, so our fridge is fully of yummies and passed goodies. Jeremiah is also playing in a magic tournament tonight so he'll just eat when he gets home he said. However, I am going to make some banana bread... my bananas are looking rather mushy! =]

Day two - subway...
Jeremiah talked me into getting subway tonight. I'm not going to count it as a night eating out for two reasons 1) we are using a gift card and 2) it is healthy and probably healthier than what I thought I was going to make!
The nice thing about subway... .I get the $5 footlong, and it last me two meals. So it's very reasonable for the veggies and everything we get.
I am going to make some banana bread I believe, and maybe some other treat for the magic guys. Not for sure.

Day one of second challenge....Chicken in Dumplings
Yup, we broke and ate out once in two weeks. So I'm going to start over with our count and see if we can go another two weeks without eating out. So day one, here we go. It seems as if we were defeated, but in reality we weren't.
Slow-Cooker Chicken and Dumplings
INGREDIENTS:
1lb of Boneless Skinless Chicken Breasts (about 3)
2 Tablespoons Unsalted Butter
2 cans (10.5oz) Condensed Cream of Chicken Soup
1 can (14oz) Chicken Broth (I think I'm going to try chicken broth out of the box... if it's still good).
1 medium White Onion, diced (half of a large)
4 Large Flaky Refrigerator Biscuits (half a can)
DIRECTIONS:
Place thawed chicken in crock pot and top with butter. Add cream of chicken soup, chicken broth and diced onions. Cook on High for 4-6 hours or Low for 8 hours. Do not stir while cooking.
Cut each uncooked biscuit into 9 small pieces and stir into the chicken mixture. Continue to cook on High for 30 minutes. Remove chicken from slow-cooker and shred with a fork. Return to slow-cooker and stir everything together. Serve hot.
Makes about 6-8 servings.
We'll see how this goes! =]

I didn't have two cans of cream of chicken, so I used on chicken and one can of celery. I also used some extra broth from the box because I only had one 10 oz can. I used chicken pieces...
Jeremiah said it was really yummy (we added a bit of salt and pepper to our own bowls). Yummy!
